This barleywine displays a deep amber to mahogany color with ruby undertones and a creamy tan head that leaves intricate lacing, indicating a rich malt backbone. The aroma offers a complex blend of roasted Puerto Rican cocoa nibs with inviting, slightly bitter chocolate notes, complemented by dried fruits—prunes, figs, and raisins—along with caramel, toasted malt, vanilla, toasted oak, and subtle spicy malt hints. This time, we’re teaming up with Chicago’s own Vargo Brother Ferments to supply their oh-so-delicious garlic-dill pickle brine. The combination of Columbus and Sorachi Ace hops and a steep of fresh minced dill delivers a very approachable kettle sour for pickle lovers and beer lovers alike.

Double India Pale Ale - 8%
This amped up Double West Coast IPA triples the hopping rate compared to our regular West Coast Wizard with over 5 lbs per barrel of Mosaic, Citra, Green Bullet, and CTZ. For all those OG West Coast IPAs drinkers we had to boost up those IBUs as well. Tons of pine, resin, stone fruit, and floral aromatics resonate from the glass. Look for big in your face Tangerine, Peach, and vibrant citrus fruit backed by a notable malty body. A clean grapefruit, pine, and resinous bitterness hangs onto the back of your tongue after every sip.

Passionfruit, Orange & Guava Kettle Sour - 4.4%
This vibrant, eye-catching kettle sour features tropical andcitrus aromas, including bright notes of Cara Cara oranges,pink guava, and sweet passion fruit. Subtle floral and herbalhints from Comet hops, along with a fresh, piney, resinousaroma from dry-hopping with Krush hops, add complexity. `Medium-bodied with lively carbonation, the smooth, slightly creamy texture enhances the tart, fruity flavors. The first sipoffers tart acidity from the kettle sour base, balanced by thesweetness of passion fruit, Cara Cara orange, and pink guava.

Hoppy Summer Ale - 5.3% ABV
Kiwi Coolie boasts a bright and lively flavor profile characterized by notes of ripe kiwi, pineapple, mango, and citrus. The malt provides a subtle sweetness and body that balances the hop-forward aromatics, while herbal and spicy notes from Czech Saaz hops added directly into the mash tun introduce a layer of complexity. This unconventional approach aims to enhance thiol precursors—compounds that, when released during fermentation, contribute to bright, citrusy, and tropical fruit aromas. To further elevate the tropical fruit character, the beer is dry hopped with an additional 22 lbs of Rakau hops, a New Zealand hop variety renowned for its bold, tropical aroma featuring notes of pineapple, mango, and passionfruit. The generous dry hopping infusion intensifies these fruity aromas, culminating in a beer that finishes clean and refreshing with a slight dryness that invites another sip.

Forest Crawler is back, perfectly balancing bright juicy flavors and piney resinous bitterness. This beer pours a rich hazy golden hue, with a creamy white head that lingers before settling into a beautifully laced glass. On the nose, expect aromas of ripe tropical fruits, including mango, pineapple, and tangerine, complemented by a hint of resinous citrus pith. A smooth and velvety mouthfeel with flavors of zesty tangerine, overly ripe pineapple, marmalade, apricot, and grapefruit engulf the senses. This hazy is an incredibly approachable and easy drinking beer for all hop heads.

Its rich chestnut hue hints at toasted malt goodness, inviting the drinker into a mellow and approachable experience. On the nose, subtle floral and earthy aromatics emerge from the East Kent Golding hops, complemented by the mild herbal and woody notes of Fuggle hops. These hop varieties lend a gentle bitterness that balances the malt sweetness without overpowering, creating a harmonious and nuanced aroma profile. Thunderbird is our Tiramisu inspired Dungeon Master that perfectly encapsulates the coffee flavored Italian dessert. We then teamed up with the local roasters of Ten Drops Coffee. Their Honduras Pacamara cold steeped coffee blend adds big espresso, clean coffee, sweet caramel, and even more super chocolatey notes. As it warms across the tongue, doughy lady fingers linger to an oh so pleasant finish. "Tirami Su" - The perfect pick me up beer.
DUNGEON MASTER: CHIMAERA CUB
Peanut Butter Cup Stout - 12%
Chimaeracub pours a deep, inky black with a dark mocha head that lingers like a sweet memory. As it dissipates, it leaves a lovely lace pattern akin to rich chocolate syrup. The aroma invites with rich dark chocolate, complemented by creamy peanut butter and a hint of sea salt that enhances the chocolate’s intensity. Notes of toffee, caramel, roasted nuts, vanilla, and anise add to the luxurious profile. Upon the first sip, your palate is enveloped in a rich interplay of flavors. Festbier is the modern German beer served at Oktoberfest because of its lighter, more drinkable characteristics.
